Harmony Beef Tallow Oven-Roasted Potatoes
Proof Grandma was right - tallow is a sure-fire way to roast potatoes - all grooves of crispiness and fluffiness inside.

Ingredients
1kg roasting potatoes, we used Agria
salt
4 tablespoons Harmony Beef Tallow
Method
Adjust oven rack to the centre position of your oven. Heat the oven to 200°C fan bake.
Put a large pot of water on to boil then salt.
Peel potatoes and peel away any sharp edges as you want the potatoes as round as possible. This helps if you shake the roasting dish during roasting to colour all parts of each potato.
Carefully drop potatoes into the boiling water and parboil for 10 minutes, starting from when you dropped the potatoes in. Drain and dry off over the heat.
Scoop some beef tallow into a small pot and melt. You want about 4 tablespoons.
Using kitchen paper to help you as they will be hot, take a kitchen fork and scratch the surface of the potatoes all over to make shallow grooves, putting in a roasting dish as you go. Pour over the hot beef tallow and turn each potato so they are covered in the beef tallow.
Put in the oven and roast for 20 minutes then turn and continue to roast for a further 20 minutes. Check potatoes and if they need more colour, roast for a further 10 minutes.
Serve hot seasoned with salt.
Cooks Notes
Large chunks of potato are best to ensure the contrast between outside and inside. Choose Agria that are large and you can cut or small Agria that can be left whole or simply cut in half.
Parboiling the potatoes allows the surface to break down a little, creating lots of starchy bits to crisp during roasting.
Beef Tallow adds incredible flavour and gorgeous colour to the roasted potatoes.
Infuse the Beef Tallow with garlic, rosemary and thyme for added flavour.
