Salmon and Asparagus Spring Rolls with Jok ‘n’ Al Chilli Pepper Sauce

Oven-baked for a healthier option, the spring rolls can be brushed with lightly beaten egg white rather than using oil.

Makes 10

5 fat spears of fresh asparagus, trimmed

1 packet spring roll pastry, 10 pastry sheets removed and thawed

2 large handfuls of medium-sized spinach leaves

10 strips of fresh, skinned and boned salmon (strips 9cm in length x 2.5-3cm in width)

5 teaspoons Jok ‘n’ Al Chilli Pepper Sauce, plus extra for serving

20 sprigs of fresh coriander

olive oil for brushing

dried chilli flakes and sesame seeds for sprinkling, optional

Method 

Heat the oven to 200°C fan bake. Line a shallow baking tray with baking paper.

Heat a char grill or barbecue grill until hot. Put on the asparagus spears and grill until dark grill marks appear and they just begin to cook (this step can be optional, but does add extra flavour).  Remove and set aside to cool. Cut spears in half horizontally – they should be about the same length and the salmon strips.

Carefully separate the spring roll pastry sheets and lay on the bench. Top each pastry sheet with 3-4 spinach leaves ensuring the bottom of the pastry is covered.

Put a strip of salmon on the spinach. Spoon about half a teaspoon of Jok ‘n’ Al Chilli Pepper Sauce on top of each strip of salmon. Top with a piece of charred asparagus and a sprig of coriander.

Fold pastry sheet from the bottom over the filling and continue rolling until halfway up the pastry sheet. Then fold the left-side of the pastry sheet over, then the right-side of the pastry sheet over. Continue rolling until all the pastry is finished and the roll is sealed.

Put sealed edge down on the prepared tray and brush spring rolls with a little olive oil. Sprinkle with a mix of chilli flakes and sesame seeds, if using, and top with a coriander sprig. Put in the oven and bake for 10 minutes until lightly coloured and the salmon remains moist and delicious.

Serve rolls with extra Jok ‘n’ Al Chilli Pepper Sauce for dipping. These salmon spring rolls can be served for lunch or as a light snack with a salad.

Notes

  • Spring roll pastry is available in New World Supermarkets in the freezer section.

  •  If you want to be a bit posh, sprinkle with sesame seeds.
