Recipe: A stunning warm salad doused in hot melted lemon, herb butter and topped with shavings of Outstanding local Meyer Cheese Parmesan. A salad that can be eaten on its own. However, we love it served alongside crisp breadcrumb-coated beef or chicken schnitzel.

Outstanding Paua Fritters with Leefield Station Sauvignon Blanc

Wine: Leefield Station Sauvignon Blanc showcases fresh and vibrant flavours, defined by zesty citrus notes and accented by subtle herbal and floral nuances. These flavours match perfectly with the subtle paua flavours and fresh herbs.

Recipe: This is the most popular Outstanding Food Producer Awards recipe. Created in 2021 you can use either fresh or frozen pāua for these ‘Kiwi as’ fritters. The secret is to add just enough batter to bind and hold the ingredients together, making sure the pāua flavour shines through! Add fresh herbs like parsley or a little basil or chervil could be included.

Wine: Leefield Station Pinot Gris has floral aromas, pears, apples and a touch of spices define the nose of this wine. The palate is rich and abundant of fruity flavours of nashi pears and melon. The well managed acidity and sweetness is a perfect match to the baked salmon with horseradish Labneh.

Recipe: Cooking the salmon “en papillote” - French for “in parchment” is a cooking method where food, usually fish or vegetables, is sealed in a folded baking paper packet and baked, steaming it in its own juices for a moist and very flavourful result.

Matangi Lamb Rack with Leefield Station Pinot Noir

Wine: Lively notes of red berries, subtle florals and a touch of mocha define the nose of our Leefield Station Pinot Noir. The palate is soft and juicy, the natural fruit sweetness and soft acidity are well balanced with the silky tannins to finish in an elegant style of Marlborough Pinot Noir. A perfect match for these Matangi Lamb Racks.

Recipe: A dish that shouts “new growth” – tender, juicy lamb on its bones, new potatoes, spring greens and sorrel. Robust garden sorrel adds depth and hints of lemon to a dish that is all freshness and lightness. Allow two-three lamb cutlets per person, adding that if your family or friends have a larger appetite, then allow four cutlets.

Wine: Leefield Station Stockman Syrah 2022 presents black and red berry aromas, enhanced by mint and dried herbs. The dry palate balances natural fruit sweetness with cool-climate acidity, ripe tannins are a perfect match for this succulent eye fillet. 

Recipe: Fresh, vibrant and protein-packed, we think you will keep craving this combination, from multi-award winner Matangi Angus Beef. Feel free to make the dressing more assertive by adding a little more harissa. When sourcing your 700g jar cooked chickpeas – it’s worth choosing good quality chickpeas if you are able – the flavour will reward.
